At 17, winemaker and owner Adam Hooper enrolled in the Bachelor of Oenology degree course at Roseworthy College, and got off to a flying start. Working as a winemaker in McLaren Vale for 20 years, with some of the best known wineries, interspersed with Flying Winemaker trips to Italy and France. The wines have always had a certain frisson, largely as a result of extreme cold soak prior to the fermentation of uncrushed whole berries.
