Just under three decades after co-founding Sacred Hill Wines, winemaker Tony Bish launched his own eponymous label with a singular focus: Hawke’s Bay chardonnay. In a typical year, Tony makes eight different wines, from the flagship Zen to the entry-level Fat & Sassy, with fruit sourced from three premium vineyards – Skeetfield (Omahu), Kokako Farms (Ohiti Valley), and Two Terraces (Mangatahi) – at his urban winery inside Napier’s iconic Art Deco National Tobacco Company building. Known for his innovative use of egg-shaped fermenters, both concrete and oak, he’s recently been joined in the business by his son, Oscar, as assistant winemaker, and his daughter, Genevieve, in sales and marketing. -ANNA WEBSTER
