Hickson House Distilling Co. Oyster Shell Gin
This gin is bracing and bold; you'd anticipate an overwhelming amount of salinity and umami from the botanicals used, but it remains sophisticated and intriguing. On the nose, it has this cooling effect from the herbs and is crisp and inviting. The anticipated briny, umami attributes begin to come forward on the finish, making you salivate and go in for another taste. Using sweeter herbs, such as tarragon in this gin, is also an excellent move to create a unique take on the oyster shell style; it helps elevate the texture that the oyster shells impart on the gin.
